Healthy Blueberry Baked Oatmeal

Healthy Blueberry Baked Oatmeal is a great grab and go breakfast for the fall season. When the weather starts to turn cold and it stays darker longer in the morning I start to crave something a little heartier for breakfast. A lot of our local bakeries and coffee shops carry different versions of baked oatmeal. It is nice to indulge sometimes but I prefer to make mine at home so I can have the final say on what goes in! My Healthy Blueberry Baked Oatmeal is a slight variation of a baked oatmeal recipe given to me by my Aunt Sue. Aunt Sue and I share a love of baked oatmeal! Her recipe is one of my "most loved" family recipes!

Although this recipe is easy enough for convenient weekday mornings it is also special enough for weekend brunch. During the week I slice and go but on the weekend I will eat the Healthy Blueberry Baked Oatmeal straight from the oven topped with warm milk and sliced bananas. If you have overnight guests this can be put together the evening before and kept in the refrigerator until you are ready to bake. It is always fun to set up different bowls of toppings and let your guests choose what they want to top their baked oatmeal with. Anything from dried berries, fresh berries, bananas, brown sugar, walnuts, and almonds would be great topper choices!

Healthy Blueberry Baked Oatmeal

Healthy Blueberry Baked Oatmeal

Mix thoroughly:
2 eggs
1 cup unsweetened almond milk
1/4 cup applesauce
1/2 cup brown sugar
2 teaspoon salt
1 teaspoon cinnamon

Stir in:
3 cups of oatmeal
1 cup of blueberries

Pour into greased 9-inch square or pie plate. Bake at 350 for 25 minutes. 

Top with milk, fruit, nuts, or brown sugar if desired.
